A few years ago Jeremy and began to research the mass production of food and its impact on us, the consumers. Based on this research we made the decision to average our animal based foods to only 5% of our daily caloric intake. We also decided to ONLY consume animal based products that are local, organic (NO GM’S) and free range. Needless to say, this decision could easily double, if not triple, our grocery bill. In order to meet our nutritional goals and enjoy grocery shopping we tend to adhere to a cross between a vegan/vegetarian lifestyle. In fact, most days we do not consume any animal based foods; however, other days we enjoy sour cream or cooking with organic free-range eggs.
As more and more people become aware of the vast changes within the food industry I am occasionally asked to share some of our favorite recipes…..and yet I never seem to get around to it. Ever. It’s pathetic. So, on this no-school day it seems only reasonable that I would take the time to condense our favorite recipes into one quick and easy blog. After all, I’ve never created a recipe, so I really just need to copy and paste the links of those who have created the meals and snacks we take great delight in. Here it goes:
and please keep in mind, I cook 6-7 days a week so this really is less than a skeleton’s worth…but it’s a beginning 🙂 Hopefully I’ll add more as time allows, but based on how long this took, I wouldn’t hold your breath! 😉
California Veggie Sandwich
Naturally I altered this just a bit because I was not about to grill in mid-December weather 🙂 So, I sauteed our veggies and made the rest according to the directions.
Vegetarian “Sloppy Joes”
Our girls LOVE this recipe. They both add sour cream to their’s, although Jeremy and I enjoy ours with mustard. I usually make homemade fries as a side, although a salad would be a healthier option 😉
While the recipe calls for pinto beans I do use kidney beans as well. Whichever I have dried in a jar. Either taste great, although I prefer a blend of both.
So this one is a little high on the glycemic index, but it really is an easy, fun meal!

Simple Whole Wheat Bread
This is our favorite, but because it calls for so much butter I rarely make it anymore. I substituted one honey for agave (same quantity) because using honey twice made for a sweet bread, the substitution yields more of a sandwich bread.
